If I have an in-text citation for a dictionary used to define a term, do I include the dictionary in my Reference List and, if so, how do I write it there?

If you have mentioned the dictionary in an in text reference then yes you should have a matching reference in the reference list. The way you'd reference the dictionary is much like a book. For example:
Delbridge, A. 2001, The Macquarie dictionary, Rev. 3rd edn, Macquarie Library, North Ryde, N.S.W.
If the dictionary has no author then reference like this:
The Macquarie dictionary 2001, Rev. 3rd edn, Macquarie Library, North Ryde, N.S.W.
