How can I transfer references from EndNote into an Excel spreadsheet or an Access database?

This is relatively easy. Open your EndNote library and select Tab Delimited as your reference style. Order the library how you wish (eg by Author surname) and then click on File, Export. Save as a Text file, to your Desktop.

Then open Excel or Access, and use that program to open your saved text file. Follow the program's instructions.

You may have to tidy up your new Excel or Access file, because all the data from your EndNote library gets transferred, and you may want to delete or reorganise some of it.
