Hello, if I am referencing (in text) a set of guidelines that do not have an author but have been produced by an organisation, how would I correctly reference this?

Just use the name of the
Just use the name of the organisation (as it appears on the main page of the guidelines) as the author, in both the in-text citation and in your reference list. For example (Department of Health 2011) in text and
Department of Health 2011, Guidelines about health, NSW Dept of Health, Sydney.
